Glycerine (glycerol) is a colourless, odourless liquid. As a food additive, it is labelled as E number E422.
It has a viscous structure and a mild, sweet taste. It is around 75% as sweet as sucrose, but has a similar calorie density.
Glycerine is valued by food and beverage formulators primarily for its humectant properties. This underpins its role as a preservative and texture enhancer – it can improve smoothness and softness and prevent sugar crystallisation.
Its molecular structure also gives it value as a stabiliser and a solvent for food colouring and flavours.
