Produced from glucose, sorbitol offers a mild, clean, non-bitter sweetness with minimal aftertaste. It is 50–60% as sweet as sucrose (table sugar) and is less sweet than many other sugar alcohols and high-intensity sweeteners, such as stevia or aspartame.
It is used to provide bulk and moisture retention, particularly in baked goods, confectionery and sugar-free gums. Sorbitol does not crystallise as easily as sucrose, ensuring a smooth texture.
Sorbitol has a low caloric value of approximately 2.6 kcal/gram. It is also non-cariogenic, meaning it does not contribute to tooth decay. It also has a low glycaemic index – the human body metabolises it slowly – making it suitable for diabetic products.
