Sodium carbonate is a strong alkali. It is used to raise pH, soften water and aid chemical reactions across a range of settings.
In food and beverage processing, sodium carbonate is used as an pH regulator and stabiliser. It can also improve texture and is listed as a food additive under E500(ii).
