Overview

Sodium metabisulphite is a common reducing agent in the production of baked goods like biscuits, cookies, crackers and pastry.

This inorganic compound is primarily used in the winemaking process to prevent the growth of yeast and bacteria and extend the shelf life of the wine. It can be used as antioxidant and preservative in fresh and dried fruits, slowing down browning.
