Tri Potassium Citrate

Tri potassium citrate (also known as potassium citrate) is a buffering, sequestering and emulsifying agent used in the manufacture of a wide range of food and beverage products.

Overview

Tri potassium citrate is a potassium salt of citric acid. It is odourless and has a slightly salty, tart and clean taste. It does not impart any off-flavours.

As a buffering agent, it helps to control pH, regulate acidity and improve the effectiveness of preservatives. It also acts as a sequestrant – preventing oxidation and spoilage – and as an emulsification agent, supporting the blending of mixtures to provide a uniform texture.

It is often used in reduced-sodium and low-acid formulations. It has a low toxicity profile and can contribute potassium to the nutritional profile of drinks.
