Sucralose is very sweet — around 600 times sweeter than sucrose (sugar) and three times sweeter than other artificial sweeteners like aspartame.
The majority of ingested sucralose is not broken down by the body, so it is non-nutritive and an excellent suitable sugar substitute in low-calorie, diet products. Sucralose does not affect blood glucose levels.
Sucralose has excellent stability under a range of food processing and manufacturing conditions: it can withstand high temperatures, a broad pH range and does not interact with other ingredients.
