A high-intensity artificial sweetener, acesulfame K is around 200 times sweeter than sucrose (table sugar), two-thirds as sweet as saccharin, and one-third as sweet as sucralose, and around the same sweetness as aspartame.
Acesulfame K provides rapid onset of sweetness and can have a bitter aftertaste, particularly at high concentrations. It is often used for synergistic blending with other sweeteners. In carbonated drinks, it is almost always used in conjunction aspartame or sucralose.
Unlike aspartame, acesulfame K is stable under heat and moderately acidic or basic conditions. This allows it to be used as a food additive in baking, or in products that require a long shelf life.
